Paneer Manpasand




Ingredients

1 cup chopped paneer pieces
1/2 tsp ginger paste
1 tsp cumin seeds
2 tsp oil
Salt to taste
1/2 tsp turmeric powder
1 tsp red chilli powder
1 tsp garam masala powder

Grind to smooth paste-
1/4 cup roasted peanut
1 big onion
1 medium tomato
2 tbsp grated coconut

Heat oil, add cumin seeds. When it splutters add the masala paste and cook for 3-4 minutes till the raw smell goes off. Add turmeric powder, red chilli powder, garam masala powder, ginger paste and salt and water as required for gravy. Allow it to boil for few minutes.

Add the paneeer pieces and cook for 2-3 minutes.

Garnish with coriander leaves and serve hot with rotis/pooris/pulav.

Ingredients

1 cup soaked and cooked chickpeas
1 cup basmati rice (soaked for 1/2 hr)
Salt to taste
2 tsp oil
1 tsp cumin seeds
1 big tomato pureed
2 cloves
1 cardamom
Small piece of cinnamon
1/2 tsp turmeric powder
1 tsp garam masala powder
1 medium onion chopped
Finely cut coriander leaves

Heat oil, add cumin seeds. When it splutters, add cloves, cinnamon and cardamom. Fry for a minute and add it to the soaked rice. Add salt, turmeric powder and cook the rice.

Heat another tsp of oil and add the chopped onions. Fry for a minute and add the pureed tomato. Add garam masala powder and allow it to cook for 2-3 minutes. Add the cooked chickpeas and mix well. Allow the mixture to get dry and finally add the cooked rice. Mix slowly to coat the rice with the mixture.

Garnish with coriander leaves and serve with raita/chips of your choice.

Eggless Apple Muffin



Well I got this recipe from Trupti's blog. I almost followed the same recipe except cinnamon powder and apple sauce. My husband doesn't like cinnamon and I didn't have apple sauce. So I had to skip those two. Other than that, I followed the same. Here is the recipe...

Ingredients:-

1. All Purpose flour - 2 cups
2. Sugar - 1/2 cup
3. Baking powder - 2 1/2 tsp
4. Apples - 1 (if it is big or two if it is medium/small)
5. Vegetable oil - 1/2 cup (I used canola oil)
6. Sour cream - 1/2 cup ( I used fat free sour cream)
7. Raisins - 2 tbsp
8. Salt - 1/2 tsp

Preheat over to 400 degrees. Line the muffin pan with liners. Mix the dry ingredients well. Grate the apple into thin strips or chop it finely. In a small bowl, whisk sour cream and vegetable oil well and keep it aside. In a separate bowl, mix dry ingredients, raisins, grated apples and the wet ingredients well. Fill the muffin cups 3/4th and bake it for 230 to 23 mts until golden brown or till a tooth pick comes out clean from it. I let my twins to fill the muffin cups. Thats why my muffins are in different shapes...

Cold Rice, Pineapple and Vegetables Salad




Ingredients:

2 cups cooked rice
2 cups pineapple, in pieces
2 cups Chinese roots
1/2 cup toasted almonds
4 radishes, sliced
2 onions chopped

Dressing:
5 tbsp sunflower oil
1 1/2 tbsp fruit vinegar
1/2 tsp grated ginger
Juice of 1/2 lemon
Salt and pepper

Preparing:

Mix rice with pineapple, Chinese roots, radishes, onions and almonds.
Combine all dressing ingredients and pour over rice salad.
Cover and refrigerate for 30 minutes.

Veal Loin with Orange and Thyme




Ingredients:

8 veal loins
1 cup orange juice
1/4 cup red wine
4 tbsp oil
2 tbsp mustard
2 tbsp orange zest
1 tbsp soy sauce
1 tbsp cornstarch
1 1/2 tsp thyme
1 garlic clove, crushed
Salt and pepper

Preparing:

Season the veal loins with mustard, garlic, soy sauce, 1/2 tsp thyme, salt and pepper.
Seal loins in a pan with oil on both sides, remove from pan and reserve.

Add the red wine to the skillet, 1 tbsp thyme, orange zest and let it reduce for a few minutes.
Add the cornstarch dissolved in orange juice and cook for 5 more minutes.
Serve veal with orange sauce and thyme.

Italian Pesto Pasta



Ingredients:

450 g dried spaguetti
1 quantity Green Pesto Sauce (click here to see the recipe)

Preparing:

Cook pasta in salted water for 10 minutes.
Drain the pasta and set aside 2 tbsps of cooking water.
Mix the water with the Green Pesto Sauce.
Add to the pasta and serve.
